Cinnamon Roll Scramble

Okay, maybe I over exaggerated about it being a replica of a cinnamon roll...lets face it. Nothing tastes as good a traditionally made, mum made, cinnamon roll...but I think Im as close as it gets for a healthy (I would argue the healthiest version) version of cinnamon rolls. 

This is similar to my 2 ingredient pancakes, but instead of waiting for each individual one, you scramble the bajeeepers out of it. DELICIOUS!

  • Takes 5 minutes. 
  • High protein
  • Tastes epic
  • Nutrient dense 
  • No grains, dairy, processe sugars...
  • 4 ingredients + Honey 

 

Ingredients

  • 2 organic free range eggs - whisked
  • 1 banana - mashed
  • cinnamon - as much as you want
  • nutmeg - adds a little danish flavour to it.

Top it with a drizzle of honey. Salt to taste. 

Method

  1. Mash the banana first, add in cinnamon, nutmeg and pinch of salt.
  2. Whisk the eggs in a separate bowl. 
  3. Combine ingredients
  4. Heat 1 tsp of butter in a pan until melted. 
  5. Pour over mixture, and scramble like you would eggs.
  6. cook for about 3 min or until you feel like the eggs are cooked. 

Voila - top and drizzle with some good quality honey! I have now had this breakfast for 10 days in a row...you could say I'm a criminal repeater of foods.
